In stand mixer or with hand beaters cream together:
- 3/4 cup softened butter
- 1 cup sugar
Then add:
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp toffee flavoring
In separate bowl mix together:
- 1 1/2 cup flour
- 1 3/4 cup old fashioned oats
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp pumpkin spice
Blend dry mixture slowly into wet mixture
Fold in:
- 1 cup smashed banana (approx. 3 bananas)
- 1 cup butterscotch chips
- 1/2 cup chopped pecans
Bake 375 12-14 minutes
Resulting cookie will be puffy and soft.
